  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries, drained and juice reserved
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla, and beat on medium speed for 2 minutes. Stir in boiling water until smooth.
  3. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool for 10 minutes, then remove from pans to cool completely.
  4. Once cooled, slice each cake in half horizontally to create four layers. Place one layer on a serving plate, spread with whipped cream, and top with cherries. Repeat with remaining layers.
  5. Frost the top and sides with remaining whipped cream. Garnish with chocolate shavings and extra cherries. Drizzle some reserved cherry juice over the top for added flavor.

Cooking Tips: For a richer flavor, use dark chocolate cocoa powder. If you prefer a non-dairy option, substitute coconut cream for the heavy cream. You can also use fresh cherries if they’re in season!
